Al Sud Palmares rediscovers summer with new dishes
To celebrate the summer, Executive Chef Louis Anjos and Chef Ricardo Luz renewed some dishes from the award-winning menu at Al Sud Palmares. By constantly seeking to offer an experience of excellence, the team decided to mix the unique characteristics of local products and their seasonality, exploring ingredients that go beyond the region.
‘The Algarve is known for a very rich gastronomic tradition, in addition to the diversity of local products. These products significantly influenced a menu, adding unique flavors, textures and cultural elements’, says Louis Anjos. For the Chef, it is important to highlight Algarve products of local origin, emphasizing the importance of sustainability and support for local producers.
The Algarve’s restaurant presents unforgettable combinations. The renewed menu is divided into 10 moments, costing €175, which can be accompanied by a complement of wine, for €95. The menu starts with codfish and sardine snacks, reinforcing traditional Portuguese flavors. Also, Chef Louis Anjos chose to highlight the freshness of this season by presenting dishes such as: violet shrimp combined with barnacles and granny apple, Alentejo lamb with purslane and chickpeas and, as a pre-dessert, melon with mint.
‘Our priority is to create a unique experience. For me, there is nothing that makes me happier than providing memorable moments to our customers’, shares Louis Anjos.
